Curry chicken clay pot
Cooking in an untreated clay pot. This means that meat, poultry and fish braise in their own juices, that nutrients and aromas remain, that food from a clay pot becomes special and diet-friendly.
Prepare for 4 people.
1. Soak the clay pot for about 20-60 minutes before the food is put in it.
2. Take a large chicken approx. 1.6 kg (small frozen then thawed is ok too of course). Rinse thoroughly inside and out. Cut off the rump and extra fat and loose skin.
3. Peel and slice some onions and carrots.
4. Pat the chicken dry.
5. Season and rub the inside of the chicken with 3-4 teaspoon . curry (medium), approx. 1 teaspoon salt and 1 teaspoon sweet paprika powder or as you like it.
6. Put the ingredients in the clay pot and fill it halfway with water. (In order to get a lot of broth sauce for the food. Extra liquid can be ignored as you like it.)
7. Place in the clay pot with the lid on in a cold oven. If hot air oven, put on the old-fashioned way with top and bottom heat 250 °C. It should be in the middle. 60 minutes from start and cold oven to finished cooking.
Note! It is good to vary the seasoning of the chicken by, for example, adding in orange juice, lemon juice, banana, pineapple, garlic, rosemary, cardamom and cinnamon spices. Quantity to taste.
Serve with rice, macaroni or potatoes and salad, of course.
