Learn to cook bean stew. Here is a good bean stew based on soaked healthy beans, chili peppers and crushed tomatoes. Full of antioxidants, vegetable protein, fiber and vitamins.
The recipe is part of the Neutral cabbage diet.


Prepare for 4 people. 

1. Soak a few different kinds of beans overnight for about 8 hours. (Or just one variety.)

2. Chop a large onion into fairly coarse pieces. Place in a thick-bottomed saucepan or iron pot.

3. Add 2-4 pressed or crushed garlic cloves.

4. In with 1/2-1 teaspoon chili flakes or chili powder or strong paprika puree 1 tbsp + tomato puree 1 tbsp+ a little water mixed in a glass. (Note: the right amount so it will be strong but not too strong it is possible to select milder pepper.)

5. Fry the above ingredients in a little oil for about 3-5 minutes. Liquid so it will not burn (see point 4.) Simmer on low heat.

6. Add about 400 grams of mixed soaked beans (rinsed and drained.)

7. Put in a vegetable bouillon cube. Or 1/2 teaspoon salt (Preferably low sodium type Himalayas.)

8. In with 400 grams of crushed tomatoes.

9. Fill up with water about 4 dl.

10. Let it small simmer with a lid to the right consistency (approx. 20 min.) Be careful not to overcook the beans so they become mushy.
