Kockgrytans liver stew
It is delicacy to eat liver stew. Lamb liver stew tastes very good is based on yogurt and is a lean dish and is also nutritious. It contains a lot of iron and vitamin A and only about 300 kcal/person and about 10 grams of fat. This recipe for about 4 people.
Prepare and bring out.
1. 400 grams of young beef, lamb or chicken liver.
2. 2-3 tablespoons rapeseed oil to fry in.
3. Salt to taste.
4. 4 spice measures black pepper.
5. 1/2 tsp. soya.
6. 3-4 dl plain yogurt or sour milk. Optionally sprinkle with a little milk as well. (Note! Can cut a little, but good and useful in any case.)
7. 1 dl flour.
8. 2-3 pcs. onions.
9. 4-6 tbsp red wine.
Cooking.
1. Rinse the liver in water and dry.
2. Cut a small jack under the membrane and pull it away with your fingers.
3. Cut into squares or slices and at the same time remove large vessels and ugly bits.
4. Mix salt and pepper in the flour and roll the pieces of liver in it.
5. Brown the pieces of liver in the fat so that they get colored for a few minutes.
7. Coarsely chop onion and brown next to it in fat.
8. Put everything in a large fryingpan included the yogurt and simmer on low heat for about 20 minutes.
9. If you want to party it up a bit, add some red wine towards the end of the cooking time.
10. Possibly make a top dressing with 1 dl of water and 2-3 tablespoons of flour to get the right consistency for the stew.
