Learn to make your own broth

Cooking soup or sauce from your own broth is not difficult and does not have to take 20 hours like in the old days when you cooked over an open fire on a wood stove. These days it actually goes as fast as 30 minutes to a couple of hours with Kockgrytan's methods. In a good soup or sauce, you should have a good homemade broth. You then just add in meat, vegetables, potatoes, spices, etc. so that you get a nourishing soup in the pot. The broth contains natural collagen that provides good nutrition for joints and skin, salts, minerals and nutrients that give good full flavor to your food.

 Of course you can use stock cubes from the store, but they contain many e-substances. preservatives, artificial chemicals and lots of salt. Then it takes 5 minutes to put in but is not as good. Better to cook according to the golden mean, boil for 30-90 min and then you get a nourishing broth. Try to make broth in a pressure cooker then it takes 1/3 of the time. Do this and prepare for about 4 people.

1. 1 large saucepan 3-5 litres.

2. 1 large whole onion that has been peeled.

3. Approx. 400-600 grams of chicken, chicken bones or beef with bones such as ox tail, neck or brisket. (cheapest pieces can be found in Turkish or oriental small food stores).

4. 1.5-2 liters of water so that it covers the legs well.

Place the meat bones in a pan of cold water and bring to a boil. Leave meat on the bones. We don't use a lot of spices in the raw broth itself. A matter of taste because we then add spices to the soup, but having a large whole peeled onion is almost a must. It is then removed when it has finished cooking. Chicken with meat is cooked for about 30 minutes, if you make chicken soup. Meat bones are boiled for 1-1.5 hours, If you want to make meat soup.

Let it simmer a little under the lid. After a while, you may need to skim off some congealed egg whites that have formed on top of the broth. Use a spoon or slotted spoon for this.

When it has finished cooking and has been allowed to cool, you can lift off any fat cake and suck up the excess fat with some paper towels.

Bone out the meat and add to the soup.

If you cook a chicken, for example, don't throw away the broth, you can also make sauce or soup with it at a later time.
