Tomato cabbage stew
This little tomato-cabbage meal is good to use when dieting. Perfect to serve as a vegetarian dish or with fish and meat. The stew contains only about 150 kcal (600 Joules). It is very easy to cook, but be sparing with the cooking fat, which is energy-rich when frying the meat or fish. The food is fine to make the day before and tastes better the day after. Can be frozen.
Ingredients for 4 people.
1. White cabbage approx. 400 grams.
2. Small leek and a large yellow onion.
3. 2 tablespoons shortening.
4. 4-5 dl water.
5. 1 pc. Stock cube.
6. 1 pc. Tomato.
6. 5 tablespoons of tomato puree diluted with a little liquid.
7. 2 tablespoons chopped parsley.
8. 1 teaspoon ground black or allspice.
Do this.
1. Clean the cabbage. Divide the head into 4 parts and shred. Do not bring the log.
2. Cut the onion into four parts and shred it into thin slices.
3. Melt a little cooking fat and fry onion and cabbage for a few minutes (Stir). Then pour into the pot.
4. Slice a tomato into pieces and fry it with the tomato pureé. If you want stronger flavor use some Sambal Oelek.
5. Mix water and stock cube and pour into the pot.
6. Let the pot simmer slowly under the lid for about 30 minutes or until it tastes soft.
7. Sprinkle freshly cut parsley over the cabbage to serve.
